Hump Day

Welp, here we are. half way through (nearly) this project.

So far... it has been hard to get my dad to eat as much food as I would like him to. It is like pulling teeth to get the man to eat breakfast. Yesterday he came home from work with most of his salad still in the lunch box, and nearly all of his snacks still there. ugh.

This morning I left a threatening note on the coffee pot to try to get him to eat his food. He left his breakfast in the fridge.

His meals should have looked like this today (I've downsized his portions a little since he's not really eating as much as I want him to).

Breakfast: apple cinnamon chobani.

mid morning snack: nectarine

Lunch: tuna salad on a whole wheat pita, vegetable chips

mid afternoon snack: banana, raw almonds

Dinner: salad (lettuce, jalepenos, bell peppers, tomatoes, tapenade) with 2 turkey & quinoa muffins crumbled over the top.

Hopefully he does a little better today. I fear he is sneaking chips and/or chocolate.

Monday night I made grilled shrimp over wild rice with chickpea salad. He didn't really eat the rice or chickpeas... but he really enjoyed the shrimp.

Marinade recipe: honey, juice from 1/2 lemon, cracked pepper, salt, balsamic vinegar, cayenne pepper, minced garlic.

Goals {Project Shut Up & Eat}

When this project came to me, the only goal I really had was to see if I could trick my dad in to doing things MY way for a week. That was a quick victory because after only about 3 minutes of prodding, he agreed. That's when I decided maybe I could have more fun with this than I thought.

After thinking it over, I realized one of my primary goals is to show my dad that eating REAL food can be a delicious, filling, lovely thing. I'm a person that needs a meal to "stick to my ribs" to make me feel full. That is from years of eating processed food, huge "American" sized portions, and being told as a kid to eat everything on my plate (which I do tell to my kids, I say "make a happy plate!" but their food choices are a lot better than mine were when I was a kid). The temporary "full" feeling you get from processed foods becomes a comforting, familiar feeling. That is why, I think, it can be so intimidating to change your eating habits.

At first I was stressing about a few things. 1- the cost of healthy food. My parents still have two kids at home, teenage boys, that eat a LOT. They also have my niece Phoenix at home- she doesn't eat much but her diapers aren't cheap and either is baby formula. Oh... and with teenage boys comes their friends... they also eat a lot. 2- the availability of organic food. Then I started thinking.. baby steps. Let me get my dad to EAT vegetables and fruit. I'll find what I can organic (Walmart is really the only option for groceries, except the occasional little melon stand on the side of the road during the summer), and just let the habit form naturally. Who knows.. maybe I'll really change his attitude and he and my mom will grow their own small garden next year (ha, yeah, right).

Once I figured out my goals for this "project" ... I became a lot more excited. I mean, not only am I, the child, educating the parent- but I am also encouraging my dad to be healthy. And by him making the effort, who knows how much longer that could add on to his life. I try not to be a worrier, but that is something I worry about often- losing my loved ones.

I have been cooking a little while I'm at my dads (I have been bouncing around from my dad's to my grandparents' trying to visit everyone as much as possible). I thought I would try to get a quote from my dad for this blog post... but this random text message says way more than some prompted quote ever could. :)

Dirty Deets {project shut up & eat}

The deal on my dad: I'd say a typical day in the life of dad goes about like this.
  • wake up, guzzle coffee
  • fill thermos, kiss my  mom goodbye
  • work work work
  • whats that? lunch time? gotta grab a little debbie cake. maybe. if there's one in the seat of the dump truck/whatever vehicle he's driving for work that day
  • work work work 
  • go home.... work around the house, help my brothers do whatever, help babysit phoenix, work some more
  • kiss my mom hello when she gets home
  • work some more
  • come in, drink a glass of sweet tea, munch on some ruffles chips while he tells mom he's starving
  • eats whatever mom whips up (she's going to eat cereal).. grilled cheese, BLT, rotel, creamy tacos (barf)
  • eat some roasted almonds or cashews, some more chips, watch tv, play a card game on his phone
  • fall asleep in the recliner... before or after eating 7 or 8 mini candy bars
  • get up, drink a glass of milk
  • go to bed
  • wake up, repeat
My dad is a pack-a-day smoker. Marlboro lights. Do you see why I want to make over his diet? As far as exercise goes, I will say that aside from walking to/from the house to the shop, and lifting/working on cars/trucks... my dad is pretty sedentary. He's a naturally thin man, always has been. I can't say he's never lightly active, but I guarantee you he's never just taking a walk for leisurely purposes. 

I am so PUMPED to start this project! :)

Shut Up & Eat

As children, we would be told to "Shut up and eat!" fairly often around the dinner table. My dad had little patience with the four of us yammering and bickering loudly while he was trying to eat what was generally his first meal of the day. So eventually, we just abandoned the dinner table all together. It was easier to eat in our various rooms, coffee tables, recliners... as long as we were quiet. This is now a huge joke in my family... we are all constantly always telling each other to shut up and eat!

Why am I telling you this? You might have noticed that I mentioned dinner being (sometimes) my dad's first meal of the day. Crazy, right? My dad has always been a very hard worker. When I was growing up we didn't have the most money... sometimes we didn't even have any money. I remember my dad spending days at work, working hard around the house when he came home, and always being the last person to eat dinner. My dad would always make sure we had enough food on our plates, and our mom, before he would even think about making his. He's still this way... and now my parents have plenty, there is always plenty to eat.

My dad's hard working lifestyle has led him to some awful eating habits. I made pizza (not the healthiest, but hey, its both our favorite!) for dinner the other night. While we were eating, my dad told me all he'd had all day before that was a Little Debbie cake. This is typical. My dad doesn't drink much (sometimes a beer with dinner, or on a hot day... and on family BBQ days), but he does smoke. I'm not sure how much he smokes anymore, but as a kid I'd say he went through a pack a day, maybe. I don't even really know if thats a lot or a little for a normal smoker. Anyway, after we were finished eating, I was kind of joking with my dad about his eating habits... and I said, "Let me plan and prepare your meals for an entire week! You'll feel so much better by the end of the week, I promise!"

My dad is often tired (he works a lot and hard and has his entire life), but I think that much of that could be alleviated by a better diet. After a little joking around (he pretty much thinks my quest to be healthy and fit is a waste of time and/or lame... in a really loving way haha), he agreed. My mom doesn't really eat very well, either... but she hates anything that isn't cereal so this experiment was a no-go with her. While its not something she wants to participate in, she was super encouraging about my dad letting me have control over his nutrition for a week.

I thought and thought about names for this project. "Project Prolonging Dad" was something I really almost chose. I am so terrified of the day my dad isn't with me anymore. We were not always very close while I was growing up. That may or may not be typical of fathers and daughters. In my adult life I have come to realize exactly everything I missed out on, and I think my dad does, too. We both make more of an effort at our relationship now, and I value his opinion on things more than he probably knows. Maybe he shouldn't know, my dad is kind of cocky (this might be an inherited trait) and I hate hearing "I told you so." That is why this project is so important to me... maybe it will show him that real food can taste good, and it can be easy to prepare. I hope that this will prolong my dad's time on earth with me, my mom, my siblings, and my children. We'll see.

This week of complete nutritional will occur June 17-24. Between now and then I will develop a meal plan for my dad and share it, share recipes, and a few other details. During the week I'll post updates, recipes, photos, and share with you my dad's reactions to the different foods he will be trying. I have 10 planned posts, and I am sure I'll be inspired along the way!

If you could take control of your loved ones' nutrition for a week, what do you think you would do? How would you react? How do you think your family would react? I am so excited and I can't wait to embark on this crazy journey with my dad, and my readers. Even if he hates everything (he won't!), it will be something fun for us to look back on.

Prep work

Tomorrow is Sunday and my first day of the 7 Day Slim Down. Did you notice the Bikini Body ticker I put on the top of this blog? My Spring Break Bikini Challenge ends on 18March but we aren't going on spring break until 7/8April. Anyway. The last time I attempted to do the 7dsd I bombed and quit on the first day. The first time I tried it, I completed it with amazing results. But I got SO SICK of the food- by day 7 I thought I would puke if I had to see another salad. So I've been prepping myself mentally for this all week. I had to, or I wouldn't be able to even try it. 

I found better running headphones today (I hope). I will try them in the gym Monday. And OH EM GEE I found an awesome running app that I can't wait to try!! Anyone out there obsessed with zombies? No? Just me? Nah... I know each and every one of you *secretly* has a zombie plan... and gas masks, flak jackets, stockpiled rounds, a few extra guns...

I'm more than a little excited. I can't remember which fit blog I saw this on.. it was a random pinterest click then a series of random tumblr clicking... but I am so excited that I found it! :) 

Tomorrow should be an easy day on the slim down, I have the food I need here at the house, but not enough for the week. Tomorrow is grocery shopping day and I'll have to go back several times throughout the week to ensure the freshness of my produce. I am excited. And ready to really kill it this week.

Elizabeth: I would like to be a good role model for my daughter Emma by being healthy and being comfortable in my own skin. I want to show her how to love and take care of herself by example. Also I would like to have a vbac with next baby and believe that losing weight and being as healthy as possible before becoming pregnant again gives me the best chance possible of having the birth I want.

Weekend!

Yay! The weekend (is almost gone... so I'm not sure why I'm cheering, haha).

Today is weigh in day.. and measure in day! I lost .5 pound.. and I lost an inch on my torso, but gained up to 1/2" everywhere else. I know why. I had wine this week. I had 2 rest days this week. I had part of a piece of chocolate cake last night for Jessica's birthday. I had pita bread last night (not a lot) at dinner. Its ok. It was a great celebration for a really sweet friend, and I will hit it hard this week! :)

Another lovely Pinterest thing from yesterday: I FINALLY learned how to create the "beach wave" look with my flat iron! I love the way my hair turned out and I can't wait to practice more. I will probably look like this a lot now.. because I LOVE the whole "just back from the ocean" look. LOVE LOVE LOVE




Yesterday I was browsing Pinterest and I saw THIS recipe for Quinoa salad. So I decided to make it. Only... I modified it a bit, and I am about 100000x positive mine tasted better than the one in the recipe. haha. So, here you go, my modified quinoa salad.

1c cooked quinoa
1/4c rice vinegar (I'm totally leaving this out next time, btw)
1/8c olive oil
2 roma tomatoes, diced
cilantro
basil (leaving this out next time too...)
oregano (also going to leave out! I think that a more spanish based flavor will be better without the italian seasonings)
4oz diced green chiles
1 can of black beans, rinsed & drained
1 orange bell pepper diced
1 clove garlic, chopped finely
sliced black olives
cholula (adding way more of this next time)
optional: crushed red pepper


it was really good, except I know for sure I don't want to include the oregano or basil next time. those were included in the original recipe. 

Ok. :) Today I am going through my closet and dresser to rid myself of things I feel the need to cling to, but don't wear. Also I will do the same with my jewelry and all the random little things in my room. This week I am doing a purge throughout the entire house.. one room at a time! :) How exciting. Hopefully the decluttering will help our house look better to potential buyers. The painter starts in the morning at 0730. I can't wait to see how the house looks all boring tan. Maybe then someone will fall in love with this place and buy it. Because if that happens, and things go the way they might.. we could be picking a place to live in St. Thomas in about 5 months. So please, pray that someone buys my house!!!

good & pleasant things

Really, I am not having the best week. :/ I hate it when that happens. I seem to be able to go from my normal, happy flouncy bouncy self to a big, mean, irritable grouch in a matter of seconds. I miss my husband. He's super busy at work and I feel like we never get to talk anymore. I know what my problem is. I just have to suck it up, and get used to it. He will be home soon. Then I will have 30 days of perfection before we have to go back to living on different continents.

Today, to pick myself up, I am going to make a list of things going on that I LOVE right now. It will probably be random, and hopefully long. The longer it is, the better I'll feel. Ready, set, GO!


  • The gym. Its my new church. And that is how life should be (aside from your *real* church, don't get your panties twisted)
  • Today I had a workout partner
  • Today I was brave and did more than just cardio for the first time since Christmas (in the gym). I lifted weights, had adult interaction, and ended up with jelly arms. LOVED IT.
  • Eating clean. I have been doing so well, and I am so proud. I can tell, all over my whole body, such a huge difference. This makes me want to keep on. I'm not even really craving anything I shouldn't eat. Although yesterday was a *bit* stressful and I had a small handful of chocolate chips. But, I worked it off.
  • Dinner with friends this Saturday. Make up. I might even wear heels. Who knows?! I know I will indulge in a delicious glass (or two) of wine. Maybe I'll have champagne. OH MY GOSH or maybe I'll have something that is mixed with champagne. I know that I am so excited!
  • Gift shopping. Its someones birrrrrrthdaaaaaaaaay!!
  • Under Armor. Yep. I bought a UA sports bra last week, and I finally wore it today. UHMAZING. I can never go back to target sports bras again!
  • Olivia's first basketball game is Saturday morning! I can't wait to see her play. I hope she loves it. She has been doing well in practice... when she isn't dancing and playing. ha.
  • 3 weeks until my over night visit to my bff Beth! Sushi, the Melting Pot, and shopping at the "fancy" mall all day Saturday. Color me pink, I am so ready to see her!!! :)
  • The closet floors are being finished in the morning! A painter is coming to give an estimate, and the yard will be taken care of soon. 
  • One week until a day shopping trip with my 2 favorite people here. :) 
  • My bffffff Ang finds out pink or blue this week!
  • Lunch date with my friend Kristi tomorrow!
  • UV RAYS. Yeah, I said it. I've been laying in a tanning bed. My eczema is clearing up nicely, and that shot of Vitamin D is helping me fight winter blues. 
  • Nicole glitter nail polish

Holy Day

Sunday is a holy day. A day for church. We don't attend a local church. As episcopalians, we are churchless here. The nearest episcopal church is an hour away. So, aside from holidays & when Andy is home to help me with the children.. we don't go. That makes me sad.

Anyway, where I was going with that whole "Holy Day" title, our bodies are our temples. So I wonder how so many people can put such awful things into their literal temple (body) when they try so hard not to put awful things in their figurative temple (mind/heart). I'm guilty of both, I sin and sometimes I fail at health and have a soda. {moving on}

Sundays are weigh in & body measure day for me. I have worked so hard this week, pushing myself physically and it paid off. I lost 1.5lbs, and I lost an inch from my natural waist, abs, thighs, calves. I also lost half an inch off my arms. I feel great. and I feel like I can really tell a difference in my body. I'm sure that part is all in my head, and those that see me won't notice.. but I feel it. Its a great feeling. I can't wait to reach my goals and be able to post my before/after photos. That moment will be glorious.

I am hosting the Spring Break Bikini Challenge- a motivating challenge between a group of girls to see who can lose the most body fat percent. The entry fee is $20, and the winner (biggest loser) walks away with all the cash. The last challenge I hosted had 13 ladies and $260. I am happy to report the winner was my friend Beth, and she has continued to lose weight and be healthy! I am so proud of her!

Since the weight has been coming off, I can no longer wear my engagement ring without my wedding band being on the wrong side to keep it on. I have been wearing my rings the "widow" way, which I feel really uncomfortable with since my husband is in Iraq... I went ahead and took my engagement ring off today. It is safely tucked away in my jewelry box until I can get it to the jewelers and have it re-sized. Which makes me really nervous because my ring didn't come from just any jewelry store, my husband custom designed my ring from a diamond bank. He picked out each individual diamond. All together my ring is 2 carats and VVS1. I love it. Its perfect. Just like my sweet Andrew.

I have one other thing I want to touch on... VITAMINS. I have a huge daily regimen for vitamins! I take Biotin and B12 for my hair, Zinc for my face, a womens multi (which has been replaced with two flintstones because I haven't placed another order with bodybuilding.com) fish oil, evening primrose oil (just started this again last night for my eczema), and green tea extract. I'm curious to know what vitamins you take or have taken, and why?
