April Foodie Pen Pal!

Hiiiiiii! :)

This is my favorite kind of post! Pen  pal reveal! Love it!

My penpal this month was Gigi, so sweet! I loved  the package I received from her. Well, WE received- she checked out my blog beforehand and was so kind to include things for my kids!

Olivia LOVED these and has asked that I buy some next time we go grocery shopping!

I am a peanut butter junkie and I can't wait to try the Justin's. I am already almost half way through the green tea, I drink a mug of it every night before bed (and sometimes in the afternoon). The peach is a great flavor and requires no honey or agave for sweetening!

I haven't tried the date cookies or oats yet, but the KIND pb granola is fantastic. I'm addicted. I sprinkle it on top of the TONE IT UP banana split breakfast, or just on a sliced banana, or with an apple. SO YUM!

Turkey Muffins!

Oh so YUM! Tonight was my first time to make them! I looked around, then decided to throw together my own quick recipe!

You will need::
1lb ground lean turkey
2 egg whites
1/3c cooked quinoa (I used multicolor)
Cumin
Balsamic vinegar (or soy sauce)
Garlic powder
Spicy mustard
Chile powder
Crushed red pepper
Fresh chives
Poppy seeds
Dash of hot sauce (I prefer cholula)

For the spices, vinegar, & mustard... I didn't measure. I just sprinkled until I thought it looked like enough. So... "to taste."

Preheat your oven to 425. Coat a muffin pan with non stick spray. Mix all ingredients together in a bowl. Fill the tins almost full. Then bake until they're finished! I prefer my meat to be super well done, I'd say I baked mine about 40 minutes.

Strawberry Vanilla Protein Muffins

I keep on *saying* I am going to start baking again. Only.. I don't because I don't want to eat all the cupcakes and junk I used to bake. Believe me, I'm fantastic at creating sugary confections BUT they're not the best thing to eat if you're trying to eat clean!

So today I decided to attempt baking with protein powder. I have made pancakes and blueberry muffins from the TONE IT UP plan, and they turned out great. With the knowledge I have gained from various blogs about substituting healthy ingredients for not so healthy ingredients... I give you my first "recipe."

You will need:

1 1/4c vanilla (or strawberry!) protein powder
3/4c egg whites (or approx 4 egg's whites!)
1 tbsp chia
1 tbsp ground flax (unless your BETH, then you can leave this out!)
1 1/2 tsp unsweetened almond milk (or strawberry soy milk)
1tbsp water
1/2 banana mashed
1/4-1/2c strawberry chobani
1 tbsp coconut oil
1 tsp cinnamon (next time I am going to leave this out and add 1tsp honey!)
1 1/2 tsp baking powder
1/2 (heaping) c chopped strawberries
sea salt (optional)

Mix all the ingredients together & bake at 350 until brown on top (about 12 minutes).











These are going to be FANTASTIC with a schmear of peanut butter in the morning!
