Garlic BBQ Chicken Rolls

Hello there!

Its #MealPrepMonday and since school is back on, I did a little meal prepping for the kids', too. I'm always looking for fun recipes and creative, easy ways to get them to eat. Especially Sophia, she's so, so incredibly picky- like pretzels are her main food group kind of picky! I was going to make pizza rolls (again), but I had chicken in the crockpot for my meal prep and decided to go a different route.

You will need:
Your favorite BBQ sauce
Shredded chicken (or beef, or pork)
Mozzarella cheese
Crescent rolls
Garlic Powder

Super super simple.

My chicken breasts were already seasoned- they'd been in the crockpot all day with green enchilada sauce and green chiles.

These are pretty self explanatory, add the BBQ sauce to the roll, then cheese, then chicken. Roll up and place on a non stick baking pan.

I put a bit of mozzarella on the tops of the rolls and then sprinkled them all with garlic powder.

Easy for packing in lunches, and easy for a quick dinner, too. I wish I had put more cheese on the tops, they would look prettier with crispy cheese sprinkles!

Check back tomorrow for our cute lunch!

Verde Chicken & Cilantro Lime Quinoa {KandiPie Kitchen}

Hi there!

Today I am sharing a recipe that I use for my health coaching clients.. and myself! :) It is currently one of my favorite meals. I love everything salsa, cilantro, lime, hot sauce, and so this is perfect for me.

I serve this on top of a salad, because I love salad and because #povertymacros. Well, if I was still counting macros. haha.

The chicken is super easy: in a crockpot, add 4 chicken breasts and 1/2-3/4 jar "my brothers" salsa verde (you can use any brand but that's my favorite). Cook on low 8 hours or high 4 hours. When the chicken is cooked thoroughly, use a large fork (I use a wooden spoon/spork type thing) to shred the chicken inside the crockpot. Let it sit on warm/low for another 20-30 minutes to soak up all the salsa and juices left in the crockpot.

For the quinoa, I have already prepped a large container of quinoa for the week, so I just use 1/2c red quinoa, cooked according to the package instructions. It doesn't have to be red quinoa, either. Mix the 1/2c quinoa with 1-2tbsp plain greek yogurt (depending on how creamy you like your textures). Also mix in the juice from 1/2 a lime, and a handful of fresh cilantro, chopped.

You can mix the quinoa and chicken together and eat it as a "one bowl meal" or you can use them for burritos, salads, etc. So many possibilities! :)

Happy eating!

Quinoa & Turkey Meatballs

This is a delicious spin on an old favorite.

I use quinoa instead of noodles since well, its healthier. That and Sophia will eat anything she thinks is "wice, mommy!" ..... so here you go!

You will need:

1lb ground turkey
1 cup quinoa, cooked
Your preferred marinara or spaghetti sauce
Cheese (optional)
1 egg
fresh parsley
fresh garlic (or garlic powder)

Mix meat, cheese, egg, and spices in a bowl. Divide meat evenly in to non-stick mini muffin tin (sorry, you can roll the meat in to balls too, but I don't touch raw meat!) Heat at 350 until done.

Heat sauce in a pan, pour over cooked quinoa, top with meatballs and cheese. If you're feeling really adventurous, you could spread the quinoa over a portabella mushroom and garnish with a stem of parsley!

enjoy!

Pizza Eggs

Raise your hand if you love pizza!! (great, I'll need to raise BOTH hands, and then I can't type!)
haha

So yeah, I am a pizza FANATIC. Honestly, who isn't? My kids love pizza, too. Last week I made them mini pizzas and mini calzones out of biscuits. They loved them.

Sometimes we do breakfast for dinner, but I get bored with normal breakfast. And... I always want pizza. So, I got a little (and I mean.. a little) creative in the kitchen to mix up our Brinner.

The kids AND husband both loved these eggs.
You'll need:
a muffin tin (I used a silicone muffin mold, shaped like half-eggs)
eggs
pepperonis
mozzarella or parmesan cheese

Preheat your oven to 350. Crack one egg per muffin hole on the tin (mine held 8). place a single pepperoni on the top of the egg, then sprinkle with a little bit of cheese. Bake about 10 minutes, or until eggs reach your desired "done."

Summer Salad

Summer is my FAVORITE season. True story. I love the hot weather, the humidity, the can't breathe sultry air hitting you as soon as you walk out of your nice, air conditioned house! Summer in the South is amazing. I don't think you can beat the patriotic themed bbq's, the family gatherings, crazy days at the lake, fireworks displays... the mosquitoes! haha!

Tonight my grandparents grilled out, and I made a nice chickpea salad! It was inspired by a pin from OH SHE GLOWS on pinterest. My grandma didn't have all the ingredients for the salad I was drooling over, so we just threw together what we had and it ended up being AMAZING.

You need:
1 can chickpeas, drained & rinsed
1 cucumber, peeled & diced
1/2 bell pepper (any color, we had a yellow/green one), diced
1 tomato, diced
fresh cilantro (we like a lot)
sea salt (to taste)
pepper (to taste)
2-3 tbsp olive oil
3 tbsp white vinegar

optional: diced jalepeno

Just mix, chill, enjoy! It paired great with grilled corn on the cob!

Strawberry Vanilla Protein Muffins

I keep on *saying* I am going to start baking again. Only.. I don't because I don't want to eat all the cupcakes and junk I used to bake. Believe me, I'm fantastic at creating sugary confections BUT they're not the best thing to eat if you're trying to eat clean!

So today I decided to attempt baking with protein powder. I have made pancakes and blueberry muffins from the TONE IT UP plan, and they turned out great. With the knowledge I have gained from various blogs about substituting healthy ingredients for not so healthy ingredients... I give you my first "recipe."

You will need:

1 1/4c vanilla (or strawberry!) protein powder
3/4c egg whites (or approx 4 egg's whites!)
1 tbsp chia
1 tbsp ground flax (unless your BETH, then you can leave this out!)
1 1/2 tsp unsweetened almond milk (or strawberry soy milk)
1tbsp water
1/2 banana mashed
1/4-1/2c strawberry chobani
1 tbsp coconut oil
1 tsp cinnamon (next time I am going to leave this out and add 1tsp honey!)
1 1/2 tsp baking powder
1/2 (heaping) c chopped strawberries
sea salt (optional)

Mix all the ingredients together & bake at 350 until brown on top (about 12 minutes).

These are going to be FANTASTIC with a schmear of peanut butter in the morning!

WOOHOO sprouts!

All day long, I have been craving brussel sprouts! That is *so* weird.. because I've only ever eaten them one other time in my life! And.. they were good, but not just oh so scrumptious, you know?

So tonight I decided to whip up my own sprout recipe, something a little more to my liking than the one I used before (I found it via Tone It Up!). I used pine nuts, just like the TIU recipe did, but I omitted a little and added a little. Bottom line: this is a SUPER easy peasy recipe and something that I really enjoyed!

You will need:
Brussel Sprouts, cut into quarters
Pepperoncini (I had to google how to spell that one) Peppers + some of their juice
Olive Oil (or try coconut oil for a little sweet/spicy taste!)
Crushed Red Pepper
Garlic Powder (or freshly chopped garlic- I was out!)
Raw Pine Nuts

Line a casserole dish with tin foil, spray with organic no stick spray. Then arrange your quartered sprouts and drizzle with 1tbsp (give or take) olive oil. Next, cut a tiny hole in your peppers and squeeze the juice over the sprouts (I also poured some from the jar onto my sprouts, I love the flavor!). Dice your peppers and sprinkle over the sprouts, seeds too. Then sprinkle the red pepper, pine nuts, and garlic over them as well. Bake on 350 for about 20 minutes (or 400 for 14ish minutes), then turn your oven on the highest broil setting for 2 minutes. This will make the sprouts a little crispy (you can skip that, if you don't like them crispy!).

I paired mine with baked chicken (Garlic Mrs. Dash, poppy seeds, chia seeds, balsamic vinegar & a tiny bit of olive oil) & a salad.

before baking (the kids half had no red pepper and a sprinkle of parmesan cheese).

my delicious dinner!
